Persillé is both a local shop - a butcher shop and a restaurant - a steakhouse. The butcher stall is taking a central position within the restaurant accessible on both sides. Its tubular steel structure bearing a stretched stainless steel mesh is powder-coated. The ensemble rests on a carpet of glossy white tiles marking off the retail zone of the butcher shop.At each end of the butcher's shop, the 2 seating areas offer -within their central parts- common tables inspired by butcher logs and on the sides 2 technical volumes with sloping roofs clad in perforated beech veneer. These volumes host stock, back-office, changing rooms and toilets. Two large leather benches leaning against the wall parallel to the facade offer a frontal view through the wide bay windows toward the street.

Persillé est à la fois un commerce de proximité - une boucherie et un restaurant - un steakhouse. Cette dualité de l'offre prend forme par l'implantation centrale de la boucherie par laquelle l'accès se fait. Sa structure tubulaire en acier thermolaqué ponctuellement complétée d'une maille inox tendue, repose sur un tapis carrelé blanc brillant recouvrant le sol et le comptoir.

A chaque extrémité de la boucherie, les 2 salles de restauration offrent en partie centrale des tables communes inspirées des billots de boucher et deux volumes techniques, aux toitures en pentes, bardés de plaquages de hêtre micro-perforé. Ces volumes intègrent réserves, bureau du personnel, vestiaires et sanitaires. Deux grandes banquettes en cuir viennent s'adosser au mur parallèle à la façade et offrir une vue frontale à travers les larges baies vitrées.
