CUT architectures was chosen to renovate the historic trattoria Alimento in the 5th arrondissement of Paris in order to achieve a revamped look would reflect the fresh dishes on the newly updated menu while staying true to the authentic atmosphere in harmony with the regional Italian gastronomy so dear to the brothers heading up the restaurant.

The restaurant’s aesthetic is guided by formal inspiration drawn directly from classical Italian architecture: the dining room sits underneath long streamlined arches that are infinitely reflected in the mirrored walls, reminiscent of Brunelleschi’s Florentine peristyles. The existing structural elements (posts, columns) were stripped down to reveal their original untreated form, a stamp of authenticity. A range of premium-grade natural materials were selected to highlight the quality of the food presented in each dish - rainforest green marble, smoked oak flooring, pastel green cushions in a suede like fabric - accentuating the cosy atmosphere at Alimento.
Aperitivo !
Italians traditionally kick off the evening with “l’apéritivo” drinking cocktails, wine, beer and enjoying small plates of “piatti piccoli” without ever sitting down: we organised the restaurant in the same manner around a long bar table placed in the middle of the room. Equipped with rotating folding seats, it’s the ideal spot to congregate while waiting to drag out the meal later with friends or family around a large table and sprawling half round oak tambour benches, cornerstones of trattoria decor.

Trattoria historique du 5ème arrondissement, Alimento a fait appel à CUT architectures pour rénover son local afin qu’il soit à l’image de sa carte italienne fraîche et revisitée, tout en conservant une atmosphère authentique en écho à la gastronomie italienne de terroir chère aux deux frères à la tête du restaurant..

L’esthétique du restaurant a été guidée par une inspiration formelle puisée dans l’architecture classique italienne : la salle est abritée sous des arcatures fines et élancées qui se reflètent à l’infini dans les miroirs latéraux, rappelant les péristyles florentins de Brunelleschi. Les éléments structurels existants (poteaux, colonnes) ont été déshabillés afin de retrouver leur aspect brut, empreint d’authenticité. Pour souligner la qualité des produits présents dans l’assiette, nous avons décliné une palette de matériaux naturels d’excellence - marbre rainforest green, parquet chêne fumé, coussins dolce vert façon cuir velours – ajoutant à l’atmosphère cosy du lieu.
Aperitivo !
Dès le début de soirée à l’italienne, on déguste lors de l’apéritivo cocktails, vins et bières en profitant d’assiettes de piatti piccoli sans s’attabler : nous avons ainsi organisé le restaurant autour d’un mange debout central tout en longueur agrémenté de strapontins rotatifs où l’on vient s’accouder attendant de prolonger le repas sur les grandes banquettes filantes en demi-ronds de chêne incontournables de l’ambiance trattoria, où l’on se retrouver en famille ou entre amis autour d’une grande tablée.
